The process starts with dried chiles — ancho, mulato, and pasilla — toasted until fragrant, then soaked and blended. Mexican chocolate, sesame seeds, peanuts, cinnamon, cloves, and a touch of piloncillo build layers of sweetness and warmth. The result is a rich, velvety sauce that coats tender chicken with a flavor unlike anything else on our menu.
