Get to know the sauces on your plate

One way to get to know Olamendi’s menu is to start with the sauce. A familiar ingredient can become a very different meal with chocolate mole, tomatillo, or red pasilla and tomato. The dish descriptions help you choose a direction.

Choose the flavor you are curious about

Mole Poblano Enchiladas pair chicken breast enchiladas with the menu’s traditional chocolate mole sauce. Green Enchiladas Verdes use tomatillo sauce, with a choice of meat or cheese. Enchiladas Rancheras Rojas use red pasilla and tomato sauce.

For another option, Fish de Veracruz is described as red snapper cooked in a sauce with tomato, olives, and capers. These are different dishes with their own ingredient combinations; the color of a sauce alone does not tell you how it will taste or how spicy it will be.
