Three ways to build the meal

The catering menu offers items by the dozen, including tacos, enchiladas, tamales, and taquitos. These are useful options to discuss when you want to choose a fixed number of pieces. Rice, beans, and salads are listed separately, so include them in the conversation about portions.

A taco bar offers a different format: guests build their plates from the selected fillings and accompaniments. By-the-pound choices include carnitas, chicken breast in red sauce, and carne asada. Ask how those quantities translate to your planned meal rather than treating a pound or a dozen as a guaranteed guest count.
